Pacojet pioneer in the Black Forest
In use since 1997: How the Pacojet is helping to shape Black Forest cuisine

Tradition meets technology
In the idyllic Black Forest, right at the entrance to Hornberg Castle, lies the charming three-star Hotel Adler – a place where tradition, regionality, and modern hospitality have been lived for generations. Today, Alexander Vogel (Junior) and his partner Stefanie Fischer are the third generation to run the hotel – with passion, innovative spirit, and a clear focus on sustainability.

A loyal kitchen helper since 1997
The first Pacojet arrived in the hotel kitchen back in 1997, purchased by senior manager Alexander Vogel. It was the model with the serial number 08 – one of the very first devices ever made! This Pacojet is still in daily use today. During the coronavirus pandemic, the device was sent in for maintenance – and the service technician was amazed: he had never seen a Pacojet with such a low serial number. A true original, then, which has been cared for with special attention ever since.
The oldest Pacojet in the DACH region
As part of our competition at Internorga 2025, the Hotel Adler was named the winner of the oldest Pacojet in the DACH region – and has since been enjoying a brand new Pacojet 4 model to reinforce its kitchen team. “The Pacojet made our work so much easier right from the start,” says Alexander Vogel Senior. “Especially with stuffing, it used to take an enormous amount of time – straining through sieves, cleaning... The Pacojet has revolutionized that.”

Creative, regional – and efficient
In the restaurant, which seats up to 120, father and son cook side by side – supported daily by the Pacojet, now even by two devices. The Pacojet is used in particular for stuffing, ice cream, and processing fresh herbs. One example of the restaurant's sustainable approach is that freshly picked wild garlic is processed into a paste, frozen, and used in portions over several months – for example, in the popular wild garlic soup.
Into the future with Pacojet 4
Since 2025, the new Pacojet 4 has also been part of the kitchen team – another step toward efficiency and innovation. The intuitive display, individually adjustable portions, powerful Jet® mode, hygienic cleaning program, and significantly quieter operation are particularly appreciated. Both devices – old and new – stand side by side in the kitchen and perfectly symbolize the interplay of tradition and modernity that makes the Adler so special.

The Pacojet philosophy: sustainable, innovative, indispensable
For the team at Adler, the Pacojet is much more than just a device. It is a symbol of quality, sustainability, and creative freedom: “No other machine offers us this variety – from stuffing to pastes to ice cream. The Pacojet is a real all-rounder and an indispensable part of our kitchen.”
