Tofu sheet ice cream

Ingredients for 1 pacotizing® beaker
1 pacotizing® beaker = 10 portions
100 g tofu sheets
800 g water
100 g rock sugar
10 g barley
60 g ginkgo nuts
Recipe preparation
(1) Soak the barley and ginkgo nuts overnight. Bring the water, sugar, barley and ginkgo nuts to the boil, cover and simmer for 30 minutes. Add the tofu sheets and cook uncovered for 10 minutes, then blend. Allow to cool and pour pacotizing® beaker.
(2) Close with lid and label. Freeze at −20 °C for at least 24 hours.
(3) When needed, pacotize® 3 times with overpressure.
