Steamed grouper with a sauce made from drunken prawns

Recipe-Ingredients

Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions


200 g prawns
100 g Shaoxing wine
15 g light soy sauce
2 g dark soy sauce
10 g sugar
100 g oil (neutral-tasting)


Recipe preparation

(1) Place the prawns in a pan and pour over the Shaoxing wine. Cover and leave to simmer for 5 minutes. Turn up the heat and flambé until the prawns are cooked. Remove the prawns and leave to cool. Mix the prawns with 100 g of the stock, the soy sauces, the sugar and the oil and place in a pacotizing® beaker.
(2) Close with the lid and label. Freeze at −20 °C for at least 24 hours.
(3) When needed pacotize® 4 times.
