American ginseng, Nashi pears, Manuka honey sorbet

Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions


20 g American ginseng
20 g goji berries
300 g Nashi pears
25–30 g snow fungus
45 g dried figs
30 g rock sugar
700 g water
30 g Manuka honey


Recipe preparation

(1) Rinse the snow mushrooms and goji berries, place in a saucepan with the ginseng, pears, figs, sugar and water. Bring to the boil, simmer for 40 minutes and leave to cool to room temperature. Add the Manuka honey, blend and pour into a pacotizing® beaker.
(2) Close with lid and label. Freeze at −20 °C for at least 24 hours.
(3) When needed, pacotize® twice with overpressure.
