Tomato and beetroot sorbet

Recipe-Ingredients

Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions


300 g strained tomato juice
300 g cooked beetroot
150 g strawberries
30 g glucose
7 g salt
50 g sugar
2 g Tabasco
1 g pepper
30 g sake
10 g lemon juice


Recipe preparation

(1) Heat the tomato juice, sugar and sake with the glucose, mix with the remaining ingredients and pour into a pacotizing® beaker.
(2) Close with the lid and label. Freeze at −20 °C for at least 24 hours.
(3) When needed pacotize® twice with overpressure.
