Red cabbage passion fruit sorbet

Recipe-Ingredients

Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions


240 g passion fruit pulp
200 g red cabbage 
150 g sugar 
0.5 g vanilla

Recipe preparation

(1) Mix the passion fruit pulp with the sugar until it has dissolved. Cut the red cabbage into 1-2 cm pieces, mix with the vanilla and the remaining ingredients and pour into a pacotizing® beaker. 
(2) Close with lid and label. Freeze at -20 °C for at least 24 hours. 
(3) When needed, pacotize® 1-2 times with overpressure.
