Pumpkin seed oil ice cream

Recipe-Ingredients

Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions


550 g milk 

35 g maple syrup 
40 g sugar 
40 g egg yolk 
20 g pumpkin seed oil


Recipe preparation

(1) Bring the milk and maple syrup to the boil once. Mix the egg yolk and sugar together, add to the hot mixture and heat to 82°C, stirring constantly. Stir in the pumpkin seed oil and pour into a pacotizing® beaker.
(2) Close with lid and label. Freeze at -20°C for at least 24 hours.
(3) When needed, pacotize® once with normal pressure.
