Lime and elderflower sorbet with mint

Recipe-Ingredients

Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions


300 g elderflower syrup
200 g cucumber juice
60 g sugar
160 g limes
4 g stabilizer
30 g honey
10 g mint leaves


Recipe preparation

(1) Put all the ingredients in a pan and bring to the boil. Depending on taste, add a little more lime juice (acid component) or sweetness (honey, sugar).
(2) Pour into a pacotizing® beaker.
(3) Close with lid, label and freeze at -20 °C for at least 24 hours.
(4) If necessary, pacotize® once at normal pressure.
