Granny Smith fennel sorbet

Recipe-Ingredients

Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions


200 g Granny Smith
150 g sugar syrup
150 g glucose
60 g lemon juice
150 g fennel
2 g ascorbic acid


Recipe preparation

(1) Roughly chop the apple and fennel, mix with the remaining ingredients, blend finely with a blender and pour into a pacotizing® beaker.
(2) Close with lid and label. Freeze at -20 °C for at least 24 hours.
(3) When needed, pacotize® twice at normal pressure.
