Caramelised plum compote sorbet

Recipe-Ingredients

Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions


400 g plums
120 g sugar
100 g water
20 g butter
1 g fleur de sel
1 g vanilla pulp


Recipe preparation

(1) Caramelise the sugar, deglaze with the water, add the plums and simmer gently. Mix with the butter, salt and vanilla, leave to cool and pour into a pacotizing® beaker.
(2) Close the lid and label. Freeze at −20 °C for at least 24 hours.
(3) When needed, pacotize® once with overpressure.
