Brown rice ice cream

Recipe-Ingredients

Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions


90 g brown rice
750 g water
1 g salt
200 g milk
200 g yoghurt
7 g lemon juice
120 g icing sugar


Recipe preparation

(1) Soak the rice in plenty of water for 4 hours and then drain. Boil the brown rice with 750 g of water and salt for 50 minutes until the rice has absorbed all the liquid and is soft. Mix with the remaining ingredients and pour into a pacotizing® beaker.
(2) Close with lid, label and freeze at -20 °C for at least 24 hours.
(3) When needed, pacotize® once with overpressure.
