Rabbit and forest herb farce 

Recipe-Ingredients

Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions


300 g rabbit meat
300 g full cream
50 g egg white
20 g ribwort plantain
20 g chickweed
20 g nettle
7 g salt


Recipe preparation

(1) Cut the meat into pieces with an edge length of approx. 2 cm. Blanch the wild herbs in salted water, remove and rinse in ice water. Mix all the ingredients together and pour into a pacotizing® beaker.
(2) Close with lid and label. Freeze at -20 °C for at least 24 hours.
(3) When needed, pacotize® twice with overpressure.
