Recipe-Ingredients
Ingredients for 1 pacotizing® beaker
1 pacotizing® beaker = 10 portions
160 g strawberry juice
160 g vanilla syrup
160 g blackberry juice
160 g blueberry juice
120 g lime juice
40 g lemon juice
Additional ingredients:
elderflower syrup
sparkling wine
Recipe preparation
(1) Mix all ingredients together and pour into a pacotizing® beaker.
(2) Close with lid and label. Freeze at -20°C for at least 24 hours.
(3) When needed, pacotize® 6 times with overpressure, put 3 teaspoons into a mixing glass and mix with a little elderflower syrup, then pour into a cocktail glass and top up with sparkling wine.
Preparation of strawberry juice and vanilla syrup:
For the strawberry juice, place 1 kg of strawberries in a bowl and heat over a water bath. Cover and steam for 2 hours. Extract the syrup with a juicer and filter the liquid. For the vanilla syrup, boil 1 kg of sugar with 1 litre of water and 3 vanilla pods and leave to infuse for 2 hours.
