Carabinero tartare

Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions


150 g carabinero (without shell and intestine)
5 g olive oil
20 g green apple
3 g sesame oil
1 g sesame seeds
3 g salt
1 g pepper
Egg yolk
Wonton dough


Recipe preparation

(1) Cut the green apple into small cubes and set aside. Place the carabinero in a pacotizing® beaker.
(2) Process once with the Coupe Set knife with normal pressure.
(3) Mix the carabinero tartare with the remaining ingredients and fold some of the tartare and the wonton dough into dumplings. Steam briefly and serve with the tartare.
