Fenugreek butter

Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions


500 g butter
6 g fenugreek seeds
8 g parsley
6 g salt
0.5 g pepper
10 g chives
0.1 g mild paprika powder
4 g coarse mustard
5 g lemon juice
0.2 g rosemary


Recipe preparation

(1) Soak the fenugreek seeds for 4 hours, mix with the remaining ingredients and pour into a pacotizing® beaker. (2) Close the lid, label and freeze at −20 °C for at least 24 hours.
(3) When needed, pacotize® 3 times with overpressure.
