Celeriac and apple soup

Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions


250 g celeriac
150 g tart apples
50 g onions
20 g butter
50 g white wine
500 g vegetable stock
100 g cream
6 g salt
0.5 g pepper


Recipe preparation

(1) Cut the celeriac, apples and onions into pieces and sauté in butter. Deglaze with the white wine and add the vegetable stock and simmer for 20 minutes. Add the cream, season with salt and pepper and pour into a a pacotizing® beaker.
(2) Close with lid and label. Freeze at -20 °C for at least 24 h.
(3) If necessary, pacotize® once with normal pressure.
