Cauliflower soup

Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions


170g cauliflower
49g butter
80g cream
4g salt
0. 5g pepper
0. 5g nutmeg


Recipe preparation

(1) Boil the cauliflower in salted water until soft and remove from the water. Sauté with the butter, fill up with cream, season with salt, pepper and nutmeg. Boil once.
(2) Pour into a Pacotizing® beaker. Close the Pacotizing® beaker, label it and freeze it at −20 °C for at least 24 hours.
(3) Pacotize® twice with overpressure if necessary.
