Vegan chocolate-coconut ganache

Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions


400 g coconut milk
300 g chocolate with 49% cocoa
100 g chocolate with 64% cocoa
50 g icing sugar


Recipe preparation

(1) Chop the chocolate, boil the coconut milk with the icing sugar and pour over the chocolate. Leave to stand for 5 minutes, stir and pour into a pacotizing® beaker.
(2) Close with lid and label. Freeze at -20 °C for at least 24 hours.
(3) When needed pacotize® twice with overpressure.
