Lemon buttermilk ice cream

Recipe-Ingredients

Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions


450 g milk 
115 g cream
160 g sugar 
13 g lemon zest
10 g lemon juice
55 g egg yolk
100 g buttermilk


Recipe preparation

(1) Bring the milk to the boil, mix in the egg yolk and sugar and heat to 82 °C. Allow the mixture to cool, mix with all the remaining ingredients and pour into a pacotizing® beaker.
(2) Close with lid and label. Freeze at -20 °C for at least 24 hours.
(3) When needed pacotize® once with normal pressure.
