Tuna Mousse

Recipe-Ingredients

Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions


300 g tuna fillet
20 g coriander
10 g ponzu
100 g olive oil
250 g whipping cream 30% fat
4 g salt
40 g water
2 g lime zest


Recipe preparation

(1) Dice the tuna and mix with the remaining ingredients. Pour into a pacotizing® beaker.
(2) Close and label with the lid. Freeze at −20 °C for at least 24 h.
(3) When needed pacotize® twice and allow to temper before serving.
