Cucumber Tabasco Granité

Recipe-Ingredients

Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions


500 g cucumber, seeded
4 g mint
250 g puréed sugar 
60 g lemon juice 
1 g salt 
10 g gelatine 
6 g xanthan gum
25 g green Tabasco
1 g salt


Recipe preparation

1) Cut the cucumber into approx. 1x1 cm cubes. Soak the gelatine in cold water, squeeze out and dissolve with some of the sugar. Mix with the remaining ingredients and place the mixture into a pacotizing® beaker.
(2) Close with lid, label and freeze at -20 °C for at least 24 hours.
(3) When needed pacotize® once with overpressure.
