Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions


400g canned chickpeas, drained
60g tahini (sesame paste)
7g salt
100g olive oil
90g chickpea water (from the glass)
30g lemon juice
2g dried cumin


Recipe preparation

(1) Strain the chickpeas with a sieve (catch the liquid) and rinse with cold water. Mix all ingredients together and pour into a Pacotizing® beaker.
(2) Close the Pacossier® beaker with the lid, label and freeze at −20 °C for at least 24 hours.
(3) When needed, pacotize® five times with overpressure.

Note: Use black chickpeas for the black hummus
