Ingredients for 1 pacotizing® beaker
1 pacotizing® beaker = 10 portions
400 g
canned chickpeas, drained 60 g miso paste 2 g salt 130 g olive oil 90 g chickpea water (from the glass) 30 g lemon juice |
Recipe preparation
(1) Strain the chickpeas with a sieve (catch the liquid) and rinse. Mix all ingredients together and pour into a pacotizing® beaker.
(2) Close the lid and freeze at −20 °C for at least 24 hours
(3) When needed, pacotize® five times with overpressure.
