Ingredients for 1 litre (1.2 quart) at 100% (Net quantity)
450g / 16oz pumpkin
300ml / 11fl.oz water
90g / 3oz sugar
60g / 2oz glucose (trimoline)
15ml / 0.5fl.oz lemon juice
1. Peel and dice the pumpkin.
2. Heat sugar and glucose in water to boil.
3. Add diced pumpkin and cook until soft.
4. Allow to cool.
5. Freeze at -8°F/-22°C for 24 hours before processing.
6. This recipe is sufficient for 15 portions. Serve between courses.
